Cream Cheese Chicken
3 lbs frozen chicken breasts
1 1/2 cubes cream cheese
2 cans fat free reduced sodium cream of chicken soup
2 T italian dressing mix (see recipe below)
Dump the chicken in the crockpot. Melt the cream cheese in a saucepan with the chicken soup. Add the dressing mix, pepper to taste and pour over the chicken. Cook on low 4-6 hours, high 2-3 hours. Serve over rice or pasta.
I made this tonight and we had it over rice for dinner. We had about half of it left-over, when it cooled I shredded the chicken and added 2 cups italian cheese blend to the sauce then added 1 lb slightly undercooked rigatoni. I am putting it in the freezer for a quick dinner on another busy night.
Italian Dressing Mix
1/3 powdered parmesan cheese
1 T garlic powder
1 T Paprika
1 T onion powder
2 tsp celery seed
1 T sesame seeds
1 T dried italian seasoning blend (mine had parsley, thyme, oregano, rosemary)
1/2 tsp salt
1/8 tsp pepper
Oil and vinegar version
1 T mix
2 T water
2/3 water
Creamy version
1 T mix
1/4 cup mayo or yogurt
1 T water.
