Recipe of the day June 5th

Beef and Bean Enchiladas
1 lb ground beef
1 onion
2 cloves garlic
1 can black beans drained
2-14 oz cans mild enchilada sauce
3 cups sharp cheddar or 4 cheese Mexican blend
12-18 corn tortillas

Brown beef with chopped onion and garlic, drain grease. Add beans and ½ can of sauce, pour other half of sauce into a casserole pan. Warm tortillas covered in microwave to soften. Take one tortilla at a time and dip in remaining sauce, fill with 2 T meat/bean mixture and a sprinkle of cheese. Roll and place in a 9x13 pan. Keep rolling until all the meat mix is gone and pan is full. Pour leftover sauce on top and sprinkle on remaining cheese. Bake at 350 covered for 30-40 min and then 10 min uncovered.

When I am in a hurry I just make layers of ingredients lasagna style.
This recipe freezes very well uncooked.
